PRODUCTS: FOCACCIA BAMBINO

The Focaccia Bambino is truly one of our more popular items used for sandwiches and appetizers. The Bambino is lightly seasoned, garnished with mozzarella cheese and when heated it has a very rich flavor and soft texture. This product is very convenient as it can be kept frozen and thawed as needed. There are 8 bags of 4 each per case.

We use Shepherds Grain high protein flour that is milled from wheat grown by the environmentally friendly Columbia Plateau Producers. We support the efforts of these farm families in their quest to champion sustainable agriculture practices.

OUR FAVORITE APPETIZER RECIPE

This simple recipe is called Crostini and it requires mayonnaise, pesto sauce, diced Roma tomatoes and coarse black pepper. The finished appetizer has absolutely incredible flavor!

• Slice Bambino horizontally and spread a thin layer of mayonnaise on each half.
• Spread approximately 1 tablespoon of pesto sauce on each half.
• Add diced Roma tomatoes and black pepper.
• Bake at 425-450 in most ovens for 5 minutes or 2-3 minutes in most impingement conveyor or convection ovens.

PARBAKED PRODUCT HANDLING GUIDELINES

Crusts may be stored either frozen or refrigerated. It is important to ensure that crusts remain stored in plastic bags and kept closed. Pizza crusts are a relatively thin bread product and are very susceptible to drying if left uncovered for extended periods of time, especially under refrigeration.

In applications where crusts are to be stored frozen, product should be thawed prior to topping and baking. Pizza crust shrink in size when frozen and will regain their specified size when fully thawed. Flavor and visual appeal can be enhanced by brushing the crust with olive oil or olive oil and herb mixture.

Par baked crusts are the easiest, most consistent product to use from a preparation and labor standpoint.
